Cheese Tango is the mobile arm of The Cheesy Guys Inc., the Ontario wine-and-cheese brand on the Bench. Mark Gibson and Dr. Johanna Cornelissen pack the cheese trailer and set up where Niagara pours — winery patios, crush-pad evenings and tasting events.

Mark Gibson is Chief Cheese Officer and President of The Cheesy Guys Inc. / Cheese Tango, the mobile artisanal cheese business he runs with his wife, Dr. Johanna Cornelissen, PhD. After a successful career in pharmaceutical sales, marketing, and rare-disease business leadership, he made the bold shift “from pharmaceuticals to cheese” — building a culinary brand that pairs Canadian artisanal cheeses with wines from Malivoire Wine Co.

With over three decades in biotech and rare-disease strategy — including leading the creation of a national Rare Disease Business Unit at Medison Pharma — he brings operational discipline, customer engagement expertise, and strategic planning to his entrepreneurial work. His mobile cheese unit is a weekend staple at Malivoire Winery, where he shares his passion for cheese, wine, and community.

Dr. Johanna Cornelissen

Johanna Cornelissen, PhD, MSc, MSc, is a certified Forest Therapy Guide and Niagara wine educator, blending nature-based wellbeing with the rich wine culture of the Beamsville Bench. As a transformational change coach and sustainability specialist, she draws on her academic background in organizational change and her passion for nature-connected practices, helping individuals and organizations build resilience through mindful, sensory-based immersion in the forest.

Johanna leads guided Shinrin-yoku (forest bathing) retreats at Malivoire Wine Company, where she invites participants to slow down, reconnect with the forest, and restore mental clarity through evidence-based nature therapy. These retreats culminate in curated Niagara wine tastings, where she draws on her long-time role as wine educator and sustainability consultant at Malivoire to highlight terroir, winemaking philosophy, and thoughtful pairings with artisanal Canadian cheeses.

I was coming to Malivoire with some very special people, my bridal party, my mom and close family and friends to celebrate and enjoy a girls' day before I got married on the Saturday. There was an amazing variety of cheeses, crackers, bread, fruits (fresh and dried), veggies, jams, and spreads. He even replenished the board throughout the event at no extra cost. What do you do with 30-plus kilograms of Niagara apricots? Around Cheese Tango that's a Dr. Johanna job. She cooks them down into her signature JoJo's Aprihot compote — bright fruit with a sweet-heat finish, made to sit on a grilled cheese.

Aprihot sold out fast in its first run — now she makes extra, because summer fruit season is short, but the demand isn't.

The pairing: one Aprihot-topped grilled cheese + a glass of chilled Niagara white wine. That is the move.
